Practically every good guide out there that produces great reviews for the best places to visit, eat and stay will be produced for the sake of securing advertising fees.  Travel writers and food critics along with accommodation inspectors like to be treated well as it helps for a favourable review.

Professional investigative journalism tends to play it safe when the subject matter is fine dining.  The writers and the reviews that flood in from the professionals like to vote yes and avoid conflict.  This is why trip advisor has become so popular, the reviews are by ordinary people.  People who really care about helping others avoid a bad experience as opposed to selling advertising space.

My own personal experience over the last 20 years has been pretty consistent when entering any establishment in the UK.  The standards are generally below average, from the greeting to the standard of the service.  There are only a few places that I have eaten at and slept in that would get a thumbs up and these places probably have a new owner now, so it would be pointless telling you about it.  And here lies the issues surrounding reviews and in particular reviews by leading publications such as the Time, Observer, Guardian but to mention a few.  The written rhetoric is only there to please their cash paying masters.
